Maple Bacon Cupcakes

I’ve been looking for an excuse to try these delicious little friends. Even the biggest bacon fanatic gets a little on edge when you mention concocting the flavor in a cupcake! But if it involves BACON and CUPCAKES, I’m willing to give it a try and I hope you do the same!



1 1/2 cups flour

1 3/4 tsp. baking powder

1/2 cup butter, softened

3/4 cup granulated sugar

2 eggs

2 tbsp. maple syrup

1/2 cup milk

8 slices crisp cooked and chopped bacon

Maple Frosting Ingredients:

1/2 cup butter, softened

3 tbsp. maple syrup

1 tbsp. milk

3 cups powdered sugar


1) Preheat oven to 350 degrees. Line 12 standard muffin cups with paper baking cups. WHisk flour and baking powder in small bowl.

2) Beat 1/2 cup butter and sugar in large bowl with electric mixer at medium speed until fluffy. Add eggs and 2 tablespoons syrup; beat well.

3) Add flour mixture and 1/2 cup milk; beat at low speed until combined.  Stir in all but 2 tablespoons bacon.

4) Spoon batter evenly into prepared muffin cups. Bake 20 minutes or until toothpick inserted in center comes out clean. Cool in pan 10 minutes, remove to wire rack.

5) For frosting, beat 1/2 cup butter, 3 tablespoons maple syrup and 2 tablespoons milk in large bowl with electric mixer at low speed for 1 minute. Add powdered sugar; beat at medium speed until fluffy.

6) Frost cupcakes, top with reserved bacon!
